Ok I was really digging what Amy did with her cheat sheet and decided I had to make one too. It took me all morning but I needed to do it. I’m always going off of memory or hunting for a recipe scratched on some random piece of paper. I have most of my tried and true recipes in binders but it’s just nice to have some thing right at hand. So here is my Quick Recipe Guide. I plan on making more but definitely not today (I should be doing Christmas cards or ironing or both). Please be warned there is either no or very brief directions…I hope you can figure it out. Also the last one I guessed a bit on because I only scribbled down ingredients that I used last time, not any measurements…I generally just add things till I get the flavor I’m looking for…use your best judgment and good luck!!! You’ll notice that these are mostly vegetarian and that’s because at the moment my husband is doing a detox diet. We generally do it once maybe twice a year (I am not because of the baby). While living in Portland, my naturopathic doctor suggested the detox diet as a good way to clean out the system. The body kinda freaks out at first but after two weeks I feel really great and I don‘t crave foods as much. I wouldn’t ever do it more than twice a year (its quite strict) but its also a great way to get me cooking healthier even after we finish the diet. It’s kinda like starting with a clean slate twice a year…if that makes any sense. So these salads are ones that I make all the time but are easily modified for the detox diet, like the lentil salad…for the diet I just omit the eggs and cheese…you get the idea. Its very important to read labels…I shop a lot at Trader Joes and Whole Foods because most of their products don’t have a bunch of icky preservatives, food colorings, additives, and sugar in them. Side note: We LOVE roasted cauliflower and roasted green beans and you will too. I never made cauliflower before (never liked it) and now I make it at least once a month and always finding new ways of incorporating it into dishes. My husband wasn’t so crazy about green beans and this is pretty much the only way he’ll eat them and he’ll eat ½ lb of them in one sitting. What? Yea. Experiment too. You can add red chili flakes the oil on the cauliflower or sesame seeds and a little sesame oil and honey to green beans. Just have fun with it. Also, I picked up a jar of minced shallots in red wine vinegar earlier this year when I was in Brussels and I’ve used them all up. They are just about one of the most wonderful easy ingredients for salad dressings (no mincing and no strong oniony bite). However I can’t find them in the states. I even looked at THE Dean & Deluca when I was in NY (gosh I love that store) and they have just about every jar of anything you could want except minced shallots in vinegar. SO…if you ever come across them please let me know so I can restock!!! Thank you much!
